Chromium is involved in the metabolism of macronutrients (carbohydrates, fats, proteins). It helps keep sugar levels normal.
Rich foods
Chromium is essentially found in calf's liver and brewer's yeast. Other foods such as green beans, broccoli, potatoes, whole grains, plums, mushrooms, asparagus, wheatgerm, meat and gruyere cheese also contain it in large quantities.
Chromium is a trace element found in small quantities in the body but is active at very low doses. The average daily requirement is about 20 to 200 µg, of which only 0.5 to 3% is absorbed. The environment of chromium plays a major part in its absorption. Indeed, amino acids or vitamin C promote chromium absorption, whereas phytates (organic compounds found in grain and pulse fibres) or zinc inhibit it.
